1 to 2 lbs. Scallops depending on size rinsed and pat dry
24 ready to eat large Shrimp thawed, rinsed and pat dry
Fresh oregano de-sprigged
Fresh basil chopped
1 teaspoon Minced garlic
Salt to taste
Black Pepper to taste
1 cup Vegetable broth
1 tablespoon Lemon juice
1/3 of cup Heavy Cream
Grated Parmesan cheese
Follow label instructions for making Angel hair pasta; drain well and set aside.
In a large skillet fry bacon crispy and set aside on paper towel to drain excess bacon fat.
Add butter to bacon fat; heat up well before placing scallops in skillet, searing for 1 to 2 minutes and then turn to cook through for another 1 to 2 minutes. Remove from skillet and place on a platter.
To the skillet add in the rest of the ingredients: shrimp, oregano, basil, minced garlic, vegetable broth, lemon juice, heavy cream, salt & pepper to taste. Stir to combine all ingredients, bringing to a simmer.
In serving bowls place angel hair pasta, add scallops and rest of ingredients from the skillet. Finish each dish with bacon, crumbled and Parmesan cheese. Bon Appetit!

Carline a native Jamaican, began her “mosaic” simply delish life-style as a young girl following her arrival to St. Paul, Minnesota in the summer of 1973. Fast forward to the mid 80's, and a chance meeting on a boat outing brought Carline together with –her husband-to-be: Lars Johan Georg Bengtsson, born and raised in Sweden, but now at home in Minnesota. Carline and Lars married in the fall of 1994 and resided for fifteen years in downtown St. Paul with panoramic views of the waters of the Mississippi River on which they first met. They traveled the world, but always returned to Sweden for summers and Christmases. Carline spent her quiet time immersing herself in Swedish language, culture and traditional music. Her love of singing led her to help form the acapella quintet Flickorna Fem. The group has toured Sweden and has also performed during visits by the King and Queen of Sweden to Minneapolis’ American Swedish Institute. Today, Carline resides in Lindström, Minnesota, where she loves to spend time outdoors enjoying and sharing the splendor of the Chisago Lakes Area with family and friends, following an enjoyable, simply delish meal around the dinner table.
She is an engaged community volunteer, serving on boards of St. Paul’s East Side Arts Council, the American Swedish Institute and the St. Paul Schubert Club. Carline is described by her family and friends as a medical device industry specialist, a sports enthusiast, passionate soprano, biker chick, fashion and interior design diva, hostess supreme, and connoisseur AND chef of enticing and deliriously delicious eats.
